Nine Years + Barrel #4 of Birobur Blue Corn Bourbon
You are cordially invited to come celebrate with us our nine-year milestone, June 2-7. We will have scratch street food from Alley Cat's Eats & Sweets + live music from The Tweed Tones.
Nine years ago, we made a choice. Would make every single drop in-house. When we made that choice, we never knew how hard that would be. We are still here. We are still creating chemistry and community. We are so proud and still inspired everyday by the place we call home. We are grateful for all your support, and we hope to see you all for a big hug and share a story or two the first weekend in June.
For our nine-year anniversary we are celebrating, releasing the last bourbon of 2026, hosting Alley Cat's Eats & Sweets for scratch street food and hosting on of our favorite bands.

Birobur™ Blue Corn Bourbon | 6 Year Old | Double Oak | Barrel #4 Release Details: *Thursday 6/6/2026 | 1:00pm at the Distillery
Neat pours and tastings of Birobur™ (Latin for two oak) bourbon will be offered at the distillery until the last bottle is sold.

THERE WILL BE NO BOTTLE ALLOCATION OR PURCHASE LIMIT ON THIS BARREL.
THIS IS THE LAST BARREL OF BOURBON THAT WILL BE RELEASED IN 2026! Why¿ We make our own spirits and back in 2020 when we laid this barrel down it was the last one made in 2020. The next blue corn bourbon will be early 2027.
If bottles are still available on Sunday June 8th at 7:00pm when we close, we will place a limited number online that can be purchased on the website and picked up later. This is the only way we can ensure the guests that drive up to the distillery get a fair shot at a bottle.
Barrel Details, Distillers Nosing & Tasting Notes:
- Mash bill: 100% Frumentum Blue Corn grown at Shooks Farm in 2019. Mechanized batch dried. Agronomically and compositionally higher quality corn than barrels #1 and #2. I.e. In year two we started to figure out how to grow and dry the corn + good precipitation. Barrels #1 and #2 were derived from 2018 corn.
- Milled. Mashed. Distilled.

- Barreled in # 2 char, new American white oak in May 2020. Mel® cask/double oak finished.
- Rickhouse # 1 (OG barrel room) - Top tier barrel.
- Nose: Oakey/Grapey Crème Brûlée/tasted brown sugar, fig, almond brittle + BIG grape sweet tart and grape Nerds on this cask. Refined, fruity, floral. Quite different and perplexing on the bouquet, yet distinctly a traditional bourbon.
- Mouthfeel/body: Viscous, velvety, textured + coating. Body: Medium to full.
- Yield: 226 bottles
- Proof: 90/45ABV
- $90ea.

Best 6yo to date. Fruit bomb and more oak than previous barrels. Grape Sweet Tarts, grape Nerds - all the grape candies on the nose + FAR more oak and traditional bourbon spice on this cask, yet it is still pleasantly balanced. We are finding the top-tier barrels are more oaky and fruitier than the lower tier barrels. Barrel #4 has more of a traditional bourbon spice that I love as well, and with the dried fruit/grape it is excellent. Medium to full bodied with an oaky balance, coupled with vanilla an interesting touch of baking spice and grape violet. Mid-palate is clean w/dried fig, + almond w/nuanced toasted grain, followed by a resplendently long sweet ester finish.
“Best 6yo to date!” I know, I know, I keep saying this, but they are only going to get better, and better, and better. No BS! Geri thinks this is better than the 8yo.
This the LAST BOURBON of 2026! No bottle limit.
